In our travels to different tournaments, and staying at places that have all different kinds of grills, Big Show is the master of all of them. I have seen him cook for 40 - 50 people, and it's always a treat. Chicken, pork, seafood, or steak, it doesn't matter. He will scrounge around and make up a good marinade or blend of spices and grill up something. Nothing rushes, rattles or worries him -- "Its all good" -- he'll say, and it always is!
Big Show Ribs
Before I put BBQ sauce on my ribs as they grill, I first add green pepper jelly. As it heats up, it oozes over the entire rack of ribs. It makes your ribs look rich, and the pepper jelly sweetens up your BBQ sauce.
